  1. Set the eggs out 30 min before using. In a bowl, stir the Eggs and Vanilla.
  2. Add the mashed bananas and mix until combined.
  3. Add Oatmeal, Cinnamon, Chia seeds and stir until combined.
  4. Optional: add blueberries to the mixture.
  5. Let the ingredients settle for few minutes.
  6. Heat a non-stick frying pan over medium heat.
  7. Scoop the batter using a ladle and brown on both sides.
  8. Serve hot with Greek yogurt, Berries and a tsp of organic Maple Syrup on top. Enjoy!
