Beetroot Avocado Salad
Beetroot lovers, here’s a simple and delicious beetroot salad with avocado. Beetroot is rich in Folate, potassium, manganese, vitamin C and iron. It has numerous health benefits like improved blood flow and digestive health, lower blood pressure, increased exercise performance, and decreased inflammation. Try it out! PS: You can always substitute cheese with dairy free cheese.

  1. Clean the rocket leaves and keep to dry on a clean towel.
  2. Steam the beetroot for 10 to 15 minutes until soften, and slice it.
  3. Caramelize the walnuts. Here, I am using a tsp of maple syrup but you can use the method you prefer.
  4. Cut the avocado and cheese into slices.
  5. Prepare the dressing in a small bowl.
  6. In a salad bowl, mix rocket leaves, beetroot slices, avocado slices, cheese and on top the caramelized walnuts. Add the dressing and enjoy!
