One of my favorite salads! It’s a sweet and sour salad perfect for any feast or gathering, and I can assure you everyone will love it. You can use your favorite greens and berries; Here I am using kale, baby spinach and Lollo Rosso, strawberries, raspberries, cranberries, and pomegranate arils. For the greens and berries, choose organic when possible. To add more texture and crunch, I'm using pumpkin seeds and caramelized walnuts (u can use raw walnuts or pecan as well).

Instructions
  1. Clean and dry all fruits and veggies in advance and slice the strawberries.
  2. In a pan, caramelize the walnuts, using a small tablespoon of brown sugar or honey.
  3. In a flat salad bowl, add the greens, fruits, pumpkin seeds, walnuts and dried cranberries.
  4. Add goat cheese on top.
  5. Prepare the dressing and serve it on the side. And Bon Appetit!
