  1. If you know me by now, I always have in my fridge clean veggies and leafy greens that allow me to prepare a salad in few minutes. But if not, we’ll have to start by cleaning the leafy greens and set aside to dry.
  2. Peel and cut the grapefruit into slices; cut the cheese into small cubes.
  3. In a pan on medium heat, add half a cup of walnuts with around a tsp of organic maple syrup ( you can go a bit more if you like) for around 5 minutes or until caramelized. Turn off the heat and keep aside to cool.
  4. In a small bowl, mix olive oil, grapefruit juice, honey, salt and pepper. I usually squeeze one or 2 slices of grapefruit to extract the juice or you can replace or add apple vinegar.
  5. In a salad bowl, add the greens, grapefruit slices, caramelized walnuts and the crumbled cheese. Pour the dressing and enjoy.
