Penne with Chicken and Spinach
Yum, Yum! Get the kiddos to help chop! Be careful not to overcook; the vegetables should stay a little firm so they maintain more of their nutrients. Leftovers are GREAT!!!

Instructions
  1. Cook pasta according to package instructions.
  2. In a large skillet, combine olive oil, garlic and chili. Cook on medium 5 minutes.
  3. Add the cooked chicken, tossing to coat well, and cook for 3 minutes.
  4. Add spinach, then the drained and chopped sun-dried tomatoes, salt and pepper and stir well to mix.
  5. Add cooked pasta and serve immediately with fresh parmesan!
  6. Serve with salad.
