Ingredients
600
g
Pumpkin
Peeled & Chopped
3
cup
Vegetable Broth
1
small
Potato
Optional

onion
Chopped
2
Garlic cloves
Chopped

tbsp
olive oil
Salt
Pepper
Nutmeg
Ginger powder
Lemon juice
Pumpkin Seeds
Cayenne pepper
Optional
Instructions
Cut pumpkin (and potatoes) into cubes.
Place on a baking sheet, drizzle some olive oil, salt, pepper and nutmeg. Bake for 30 min, until golden.
In a saucepan, sauté onion and garlic with a bit of olive oil, on medium temperature, for few minutes until fragrant.
Add roasted pumpkin (and potatoes) into the saucepan.
Add 3 cups of vegetable broth.
Bring to boil, cover, and reduce the temperature.
Let simmer for about 30 minutes until pumpkin (and potatoes) become soft.
Purée the mix and add salt, pepper & ginger powder to taste.
Add a squirt of lemon juice and some pumpkin seeds for a crunchy texture. Enjoy!
Optional: Add cayenne pepper.
