Instructions
Directions
  1. In a large skillet or pan, heat olive oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
  2. Add the halved cherry tomatoes and cook for few minutes until the cherry tomatoes start to soften.
  3. Meanwhile, you can start cooking the spaghetti. Bring a pot of salted water to a boil, add spaghetti and cook for around 10 minutes or according to the package instructions.
  4. Back to the pan, stir in the sliced sun-dried tomatoes and cook for a minute.
  5. Pour in the tomato pulp and sprinkle with salt and oregano.
  6. Let the mixture simmer for about 7 to 10 minutes on low heat.
  7. The spaghetti should be cooked by now. Combine the spaghetti with the sauce and toss until the pasta is evenly coated. If necessary, incorporate some of the hot water used to cook the spaghetti.
  8. Garnish generously with grated parmesan cheese, and top it off with fresh basil leaves.
  9. Serve immediately and savor the simplicity and delightful flavors. Buon Appetito!
Tips
  1. Ensure that the tomato pulp you use contains only tomato and salt.
  2. You can adjust seasoning as per your taste preferences and feel free to sprinkle cayenne pepper, extra parmesan cheese or basil leaves before serving.
