- 2 cup Rocket leaves
- 2 medium Beetroot steamed
- 1/3 cup Goat Cheese or Feta
- 1/3 cup Caramelized Walnuts
Dressing
- 1/4 cup olive oil
- 1/4 cup Balsamic Vinegar
- 1 tsp Dijon Mustard Adjust to taste
- 1 tsp Maple syrup Adjust to taste
- Salt & Pepper Adjust to taste

Instructions
- Clean the rocket leaves and keep to dry on a clean towel.
- Steam the beetroot for 10 to 15 minutes until soften, and slice it.
- Caramelize the walnuts. Here, I am using a tsp of maple syrup but you can use the method you prefer.
- Cut the avocado and cheese into slices.
- Prepare the dressing in a small bowl.
- In a salad bowl, mix rocket leaves, beetroot slices, avocado slices, cheese and on top the caramelized walnuts. Add the dressing and enjoy!
